Judy’s Rum Balls
no cook… no bake rum balls, y’all.
In a large bowl, mix and knead until doughy:
2 cups fine graham cracker crumbs
3/4 cup powdered sugar
1/2 finely chopped walnuts
1/4 cup plus 2 tablespoons dark spiced rum
1/4 cup dark corn syrup
2 tablespoons melted butter
Chill… and then roll into one inch balls. Roll balls in 3/4 cup course grain sugar (found at Trader Joe’s). Cover with plastic wrap and refrig for 48 hours. This will yield about 70 of those little devils. Enjoy.
Ha. I love how the recipe calls for 1/4 cup plus 2 added tablespoons dark rum.
As 1/4 of a cup is just not enough.
Of course, the amount of rum is adjustable, yeah? to taste…
